In the DAI world is their going to be actually stuff to discover? Like some hidden temple having some powerful staff guarded by an ancient evil that is out in the middle of no where and the only way to find it is to explore. Nothing worse then having an open world game, with nothing to discover. I like to explore and find stuff.

From what the devs have teased there will in fact be things you can discover just by stumbling onto it. I believe it was at the E3 Demo they said that there are treasure caves and the like on the map that are not marked on the map in any way because they want people to explore and find them by themselves.

Yup, and in some of the more recent gameplay vids, you can see how the open world works, and how you can interact with it.

I don't know if there will be respawning, but the enviroment will change depending on your actions. So if you hunt bears to extinction in an area, the deer population may flourish, which in turn will make poachers appear, which may eventually become a bandit camp. That sort of thing. But straight up respawning? I don't know, but I'd wager there is some, since you can continue playing after completing the main quest.

I know the dragons are suppose to be the apex predators. But I wonder maybe hidden in some deep cave or where ever, their is a creature that would put the dragons to shame. A creature u may have to be maxed out in to touch.

It was stated on the BioWare stream this past Saturday that areas will repopulate after you leave them. In fact, after closing a fade rift and wandering off down the coast a ways, they returned to the former site of the rift a few minutes later and some bandits had spawned in the vacated area.
