So imagine the romances were completely up to you. How would they be different from what BioWare has done? You can have up to 8 within your companions/advisers.
What you cannot do is change a character's sexual orientation. That is a character design, not a romance design.
You can have as many or as little (or none) of race-gated romances as you wish.
For me personally I would've kept most of them as they are now; but I would take away two romances BioWare has given us and add in two more. Basically, it is as follows:

-Josephine --> Bisexual
-Iron Bull --> Bisexual
-Sera --> Females only
-Dorian --> Males only
-Varric --> Females only --> Dwarves only

4 straight, 2 gay, 2 bi romances.
Who you cannot romance
-Cole
-Leliana
-Solas
-Blackwall
Who is race-gated
-Cullen (humans and elves only)
-Varric (dwarves only)
So yeah, basically I would've scrapped Blackwall and Solas being romanceable and added Varric and Vivienne. Everyone (except Leliana and Cole) can have a justifiable romance, but I would've come up with good reasons as to why Solas and Blackwall are not interested in pursuing a romance.
