Before I begin with Orlais, I will mention this shall be a bit speculative and going off what we know atm, since the game isn't out. That said, we have enough images and concept art to get an idea of what Orlais is like. there are a lot more pictures in this article, I might do a revision after seeing more of Orlais to decide btw.
Orlais
Orlais is based of france, though from a time period later then Fereldan is based off of. As to what period, that is hard to say. Perhaps the French Renaissance(1500s and 1600s) is my guess. Anyways, the main thing though is that the art of this time period and of Orlais was Opulent. If there is one word to describe fashion for the rich of this period, grandiose and opulent was it. It is this time when fashion became extravagant, and poofy for both men and women.
One of the bigger trends over all was the usage of more colors and embrodery. The men and women of europe showed off their wealth by wearing various colors, though in more protestant countries black became a common color(in the netherlands it was really popular). The other trend was wearing detailed embrodery. Basically anything they could do to show their wealth they did.
Men
When people think of the opulence of the era, it is often of women, but Men of this era wore just as much as opulent outfits. It was also during this time that the Doublet became the height of fashion and the tunic fell by the way side. The big contrast between this era and the medieval is the lack of robes for men. Monarchs stopped wearing them and transitioning into poofy pants and doublets.
Though both men and women as children wore dresses, it was during this era that the process known as breeching became a cultural practice. Basically a young boy would wear a dress as a child till around 3-8 when he would be breeched into pants. It was a rite of passage that boys looked towards.
Sashes, jewels, poofy pants and more were all just some of the designs. You can even see some of the poofy pants on Duke Prosper there. The point though is that for men it was a time of opulance, see the images below for more proof. What is noticable is the ruff around the neck. Even Prosper is sporting one, even if it is a tad hidden. Though it is much more noticable on the Cheviliar. Even the concept art guy sports one. Of course it is not nearly as wide as it could have gotten in real life.
side note: while not really relating to clothing, there was a period of time when long hair on men became rather fashionable. King Charles 1st of England for instance, is sporting rather long hair as our the two stuart brothers. It is a bit harder to do hair fashions compared to clothing since they changed rather quickly.
Women
When it comes to women of this era, just like the men it was opulent. They shared the ruff with the men, though where men had poofy pants, women had poofy sleeves. However, in Orlais, we don't tend to see the ruff for women at least not from the concept art I have seen. Vivianne though is sporting a colar that was in fashion during this period for women, notably Elizabeth the 1st wore one.
It was also around this time that the corset started to come into fashion. Though it wasn't till the later 1600s and into the 1700s that the corset became the mainstay of women's wear. On thing that became common for women was to replace the upper part of the gown with the doublet.
As you can see though from both the paintings, vivi and celene, the dresses were wider then they were in previous centuries. It was in this time that they became wider, though not really to the extent that they would become in the 1700s; there are exceptions of course but baring the great farthingales, they were not as wide as they would become. Comparing the dresses of Fereldan women to the artwork of Orlaisians, we can notice a similarity. One also notices how much more opulant Orlaisians are.
