1) ME1-3: Alien Languages
Details: written and spoken alien languages (there are 100s of college linguistics majors that will do this for you for free.)
Why: MASSIVE IMMERSION, and so dedicated fans can share a level of geekiness that no one else can

2) native 3D TV support!!!!! and/or oculus rift support.
3) ME2-3: random party member conversations
Details: in ME1, you can just select a team member and they'd comment about their surroundings. it was a little thing, but it really added to the overall immersion and connection to that character
4) ME2-3: I really liked not having to think about finding or running out of ammo in ME1... it helped keep the focus on the story and what you were doing. it would be cool to do the same in ME2-3... no more thermal clips.
5) kinect voice commands for ME1-2... it was pretty awesome just saying the voice dialog choices in ME3
6) more alien starships to explore in side-missions (asari, salarian, turian, hanar, lol). ones that are really well functionally thought out and creative in style, but realistic and not too out there. (i want design ideas for my office, hehe)
7) develop out the "alternate plotline" that was originally side-lined for the ME3 ending. in and of itself, that would give a ton of people a huge reason to replay it. plus it might make sense for the ending. it can even be "comic book style" endings. a story is about the concept touching down, incrediblely rendered cut-scenes are cool, but for the novelty of a new storyline... that would be cool.
(no doubt that would be classified as a remake for ME2-3, buuut, it would probably... triple sales?)
