I was playing as the Huntress but noticed that I would rather play as the Scholar, the choices i seem to want to make would be more suited as that character. Any way to restart it all?

Yeah there is a card that says 'prepare for the divine' that has a restart option. As far as I know you'll be able to pick again.

You need to get past the tutorial (or skip it) before the "prepare for the divine" card shows up so you'll need to play till then.
