I couldn't find anywhere that talked about this, so I thought I might as well ask here.
I am far enough into the story now that I would hate to have to restart the game. I know that one way you can lose is to lower both your Dignity and your Freedom stats to 0, but are there any things that should be avoided?
Can you 'die' if your health reaches 0? Are there any choices later on that would prevent the Divine from coming?

It's not just Dignity and Freedom, if any 2 of the 3 reach 0 at the same time the Divine will not come to Serault and you'll lose the game. My health has never reached 0, but I don't think it kills you, you just have to rest or pay to regain some health.

And I assume not getting 15 trophies/viands/secrets when the Divine arrives also makes you lose.

I've died ( health reached 0 ), it just prompts you to wait a bit, increasing some peril/twilight/revolution, or heal immediately.
I chose the latter and it consumed an elfroot too.

Currently, I'm finding easier to heal during the hunts, when you encounter a Glade.

So just to straighten things out, once Market days runs out the Divine will show up?

Strikes me then that the thing to do is not to drawn any cards on your normal screen when a market day roles around and just go hunting until you feel like progressing the story. The only drawback to that is that hunting is not only time intensive but can cost you Health which in turn costs Bags of Royals to heal normally. I have heard that there are options during Hunts to regain Health but my characters Health has never dropped to 0 so i do not know what will come of it then.

I think it's more so which ending you get and what 'losing' means to you. It doesn't seem very hard to win this game as long as you keep your prosperity, dignity and freedom up.

That is a strategy that should work if you have the clues for it. Although you should probably have enough items by the time the Divine comes around without having to do this.
