There aren't any long hair styles. There are a few that have buns, braids, and ponytails that the length could be long. There are a few loose styles that reach the shoulder. But nothing loose and past the shoulders.
You can have the rest of the traits that you described.

Any special reason that there is no long hair? Dragon's Dogma has a great character creator with lots of choices. Seems odd with so many details apparently available in Inquisition that long hair wouldn't be one of them....

Probably clipping issues or graphical bugs, different programs work differently

There are two or three active "hair" threads right now, where you might want to join the conversation. There's one about qunari hair in this sub-forum. And there's a general hair one in Scuttlebut too

I'd like slicked back hair, but not like Cullens. Longer, but not beyond the shoulder, and not poofy. If there's ever slicked hair to be chosen in a game, I've always noticed its to long, short, or poofed out. Its weird. = /
Was going to ask about heights, but pretty sure that's not an option, and it looks like Elves don't have facial hair despite a comment I heard saying otherwise (watched a vid, and it wasn't there where it was for a human). Alas...
Tried to share a link for a pic, but won't let me do it (unless I'm doing it wrong of course).

Yes you will. If you count shoulder lenght styles as long like I do.
