For those who have opened the chantry, want are the consequences the game says you get for doing so? Do they make it harder to win or can you get around them without difficulty?

You lose a couple of Trophies, Secrets, and Viands if I recall correctly.
 
So, it technically makes it more difficult to win considering you use those to try and secure her favor. But if you played the game well and earned enough of each, you should have no problems when the unsealed chantry comes into play.

I think I had an 85ish percent chance with 70ish cunning.

It's has strong story implications and also a chance to get a lot of bags of royals.

As for consequences...

Having high cunning is how to get off scott-free without anything happening to do, but it's not the only way. You can also have high scholarship and the only downside is loosing a little favor and if you have plenty of viands, trophies and secrets, that won't impact anything.
