I guess it depends on who you ask. I think most human females posted here look the same, as do male qunari. They've got a pretty generic cookie cutter look to them.
I think that has to do more with the player's expectations than the capabilities of the CC. My stable of Inquisitors is fairly diverse when it comes to looks, if not quite as diverse as I'd like. I think my M!Trevelyan is my most 'generic' character, but my other Inquisitors all seem to vary from the so-called 'generic' Inquisitor look.
Some people don't have the time or inclination to invest in learning the CC. When they achieve a character that to them is good looking/pretty/acceptable, then they run with it. And that's fine. Then there are those people who have a vision and won't let go until that vision is met. That's also fine. Me, I tend to work from references for inspiration, and I just play around until they feel like what I wanted when I picked the reference, even if they don't LOOK like the reference. And that's also fine.
And, like you, I think each player who does invest in the CC will tell you a different answer when you ask 'which is the hardest race' tbh. Mine changes every time I open the CC, I think.
