I don't like the heavy Turian emphasis on structure and order. By the same token, from the Codex entries on the Salarians, it seems like they have a somewhat autocratic government (the women dictate everything), so I'd be in the same situation.
I like the Asari's chaotic society, with the main government being direct democracy. Although, from what we learn from Matriarch Aeythia, most young asari spend their lives screwing around. If I had a 1200 year lifespan, I sure as hell wouldn't be wasting it stripping in a bar or running around in some merc band. Imagine how much knowledge one could gain with a massive lifespan, plus the ability to transfer information and experiences by the mind-meld.
I like the Geth for similar reasons. There's no ruling class since the geth function by direct democracy. Add that to instant knowledge exchange, extremely powerful capacity for thought, and an infinite lifespan, and that's a pretty good deal.
