The Mage doesn't really stand out to me in this game, so I'll try to do what I can with the characters. Also, can you choose two specializations?

You can completely ignore them if you want. You only specialize through a quest anyways. If you do choose to have one, you can only pick one since they can affect how those react around you.

Don't see why not. My current DA2 that I'm doing to kill time until DAI has me only using a specialization. I've unlocked both, but am only putting points into one of them. Seems to be working out fine.

Mike confirmed in a tweet a monthish ago that we could choose to not have a specialization.
