Has anyone seen any videos with crafting in them? I've looked around and I cant seem to find any besides the officially released ones from Bioware.

You didn't look very hard. Just type "Dragon Age Crafting" into youtube. Here's one where VGS talks about their issues with the crafting system, but they actually show the different systems. It's an example, there are other videos.
