Or can we play offline? I don't play multi-player, and can't trust my internet connection.

You should only need to connect to Origin once to activate. And once more if you want to use the Keep to import your World State. Origin has an Offline mode and does not require a constant Internet connection to play.

I play Origin game offline all the time. They don't require you to check in after a certain amount of time, so it's completely offline.
