Can I, if I wanted, start all 5 of my Keep states tonight without screwing them up? As long as I save a game of one before importing the next, will everything work fine once I go back and fourth between characters?

Yes. Once a new game has started, the Keep state that you import will be permanently set to that particular game. You can switch between games at your leisure. 
Just remember to sign back into the Keep and "export" the next world state you want to use for the new game. Enjoy!
