Is there a way to salvage weapons and armor in singleplayer to gain crafting components?  If so, how?

So far I have not found a way to do it and I'm wondering if I should just sell the weak gear for a few coins.

You can strip the crafted enhancements off of them, if they have any. But I am certain that you cannot break them down ala Diablo 3. You have to sell it or leave it.

How do you strip the enhancements off them?

Same way you apply them.

I haven't been able to strip weapons that I loot. Just the ones that I craft myself.

Go to modify the weapon or armor of choice, click on the item that has enhancements, then choose the "Empty" option to remove the enhancement.

You can modify your weapons/armor at the tables in Haven or Skyhold (one of the tutorial quests directs you to the ones in Haven). And when you're in the modify screen, move to your party members to modify their equipped items, so you don't need to unequip them first or anything.
