Wait till you get back to your stronghold and visit the research station. Then go sell anything remaining.
Valuables in DA:I are what Junk was in DA2. Sell them to your heart's content.

Baad advice.
I used to at first Sell All except the Yellow stuff. But then i realized that the other stuff that you use for requisition - it's also placed in the Valuables. So don't Sell All, sell one by one.
I would say to do just the first requisition of every region you open because it's pointless to do more than that. Quest completion give a lot more inquisition points than requisition. In my last PT, I ended up with over 300 IPs and I only did one requisition per region. I sold all valuables I picked up.

Some valuables are used in requisitions. The ones I can think of off the top of my head are malachite, ferelden medals of service and the four types of dwarven artifact that drop in the Hissing Waste.
It's been my experience (on PC) that when you use the "Sell All" feature, it doesn't actually sell the creature research items, so you can still drop them off for XP. It's true that you can end up selling items used in requisitions, but I have vowed never to do another non-plot requisition. I always tell the Requisition Officer to blow it out her, um, helmet. My post-game power tally is at 300, so I don't really see that I need to waste my time on them.

Yeah, IIRC that was one of the earliest patch fixes, making them unsellable. Always wondered why they didn't just go with dedicated "quest items" and "junk" sections.

I've sold Amethyst and it's suddenly appears to complete the quest.
Two things you might need that still show up as sellable valuables: malachite and spider ichor

They are mostly pointless; however, some people hate having anything left in the journal to-do list. Especially something as simple as a req. Not having what you need to fill it (and no sure way to get more) is beyond annoying.
