Are we able to choose at all or are they set to certain classes - if so, does anyone know which ones?

They all have set classes just like DA2.
They are set insofar as you don't get to choose their specialization. That being said, within the regular ability trees, you can spec them however you want. If you want Varric to charge into the fray with double daggers, you are perfectly able to do so.
Would anyone happen to know why only some of my party members have access to their prestige classes and some don't? I don't want to spoil, but I've hit the point where all that becomes available, and it seems prestige class access was just given randomly to my party.

I am having the exact same problem. I tried to figure out if some of them don't like me enough to specialize, but that doesn't seem to hold up for at least one of my non-specialized companions. If their access to their specialization is approval rating, that's really a shame, as it just means I'll be using those characters even less frequently, thus further reducing their access to approval increases.

Could you just check that they are all the same level. It is kind of obvious, but I know my companions are at different levels.
So there does seem to be some Approval-related element to unlocking a companion's specialty. All of my companions are currently level 10, and the three of them whom are on less-than-friendly terms with my Inquisitor do not have access to their special skills. So that is something to bear in mind for everyone.

Me neither. I was looking for this relationship level bar, and I can't find it.

For me, putting them in my party unlocked it for the ones that didn't have it yet.
Agree with above poster. No prestige/specialization classes showed up until I moved my companions in to my active party. I have them unlocked for every companion now and I don't think I've done anything special. There are a few people I've never had in my party for a single quest so far.
I've read on user's reviews that you can't control your party movements or map position, it is all AI. Why would the party be there to begin with. Isn't that a design flaw?

Not true at all. You are able to issue commands to party in tactics mode, which I believe has a menu option to pause or not pause (eg bonus difficulty setting). You are also able to freely switch the character you control at will.
Edit: to main post, I would just refrain from leveling characters til you actually put them in your party.
The cards in the party selection screen change depending on your relationship with them.
Anyone have any idea why my companions can take some of the skills in the specialization tree, but not past a certain point? I am having that issue with Blackwall and Solas. I can take a few skills in each tree, but then progress no further. "You cannot yet unlock this ability." Other characters like Varric and Dorian can progress just fine. It has nothing to with being in the party, as I use them a lot, or approval, as I am high with both of them.
Any ideas would be greatly appreciated.
Edit: Add Dorian and Varric to the characters that can't pick skills because the ability can't be unlocked yet. -.-

Only had that happen to me where I couldn't assign skill points. From what I can tell the reasons it can happen are 1) your trying to go backward up a branch, 2) Your trying to unlock multiple skills at once (seems you have to apply every skill in turn) 3) game thinks your in combat.
