Having just started playing , I noticed that all NPC's refer to my male PC with female pronouns. Not something major, but jarring enough to hurt the suspension of disbelief.

I'm hoping to get a Bioware response on this, is this something I can fix my editing a character or save file somewhere?

Bioware should of hotfixed this on day 2, why is it taking so long to get another patch?
When you look at other companies like blizzard and arenanet they quickly push out a hotfix like this as soon as its reported, don't understand what bioware is waiting for, people are already finishing their stories, the whole games practically ruined by being called the wrong gender through the whole story.

If you decide to restart, I've heard that shuffling the cards around, and making sure to switch back and forth between gender and species options can help minimize the likelihood of the bug occurring.
My information is second hand, though.

I am 34 hours in and still haven't noticed anyone calling my Inquisitor by a "he" or "she". They just say "the Inquisitor" as far as I have seen. Any idea on when I am gonna have to face this discrimination of my character?

Err... it's a pronoun, not someone turning you down for a job because of your Inquisitor's gender! ![]()

It doesn't bother some people. It kinda bothers me though. I am one of those people who finds it impossible to play as something they aren't irl.

My comment was directed at the fact that you referred to NPC pronoun-use as "discrimination."
You don't have to worry. The bug is limited to pronouns and such. It doesn't change the gender of your character.
