So I started the Hinterlands (no spoilers), and I wanted to do another area. But once I leave the Hinterlands and go back to Haven, I can't return to the Hinterlands. It says quest complete. All of the other Hinterlands areas are different (can't explore myself).

I was level 5; I wanted to go to Orlais to recruit some other characters (level 4-7 area), but as soon as I left the Hinterlands I couldn't return to do the missions there as it said the "quest was complete." It was FAR from complete, I barely touched 20% of the area. So I retrieved a save before I left Hinterlands and pressed on. I'm level 9 now and still not done.

Am I supposed to out-level most of the game by focusing on the first area and finishing it? I'm so confused.

You may certainly return to the Hinterlands. Simply open up your Quest Map, then hit Y (on Xbox) to open the World Map. You can then select to travel back to the Hinterlands (or Haven) from there at almost any time. Also, what you're seeing in the war room, you can highlight that completed mission again and there's an option at the bottom of the screen to travel there.

It won't be for that particular mission any more, just for the area (Hinterlands).

No, you should be able to go back once you finish the quest in Haven. Once you leave the Hinterlands for the first time and return to Haven, the game forces you to check in at the Chantry before you can go back out IIRC. I've been jumping from area to area without problem--the start of the game just has you a bit on rails is all.

I hadn't noticed the "fast travel" button prior to your mentioning of it; that was immensely helpful, thank you!

Returning to Orlais after recruiting the two companions there was the -worst- intuitively-speaking. No fast travel option on the map, so I had to go to a Feralden area, then open up the map, then world map, then Orlais, then the Cheateu and then open up the floor map and travel to the stairwells. I had to do this because, at the time I visited (despite being twice the recommended level), I couldn't afford any of the recipes or oddities available there.

I think a lot of us are paranoid of another Lothering.  On my first playthrough of Origins, I didn't recruit Leliana or Sten in Lothering.  I wanted to see what was in the next city so I figured I'd come back to quests in Lothering after I left.  Oops.  I actually never even encountered Leliana.  I got like 3/4 through the game thinking "Where is this party member Leliana at?"  I didn't bother googling or looking for help because I didn't want to spoil anything.
