I had some trouble remembering and figuring out the controls at first, and I've seen some other people with the same problem, so I thought it might be useful to have a list here on the tutorial forum of all the controls.
Walking: left analog stick
Camera: right analog stick
Change Party Member: click up or down on D-Pad
Tactical Camera: hit the BACK button on the center of the controller; hit BACK again to get out of this mode
Radial Menu: LB button, the top left button (left bumper)
Attack: Hold down RT button, the bottom right button (right trigger)
Jump: Press A
Close or Disrupt a Rift: HOLD A
Switch Move Set: hit LT, the bottom left button (left trigger), to toggle to your other moves.
Search for nearby items: click down the left analog stick until it sends out a golden pulse
Gallop a horse: hold down the left analog (this can be a bit difficult)
Speak With Party Members during banter when given the option: You need to first click down on the right analog so that the dialogue is no longer greyed out. Proceed as normal from there.
To get to the Map: hit the START button, and then press A.
Menu: Hit the start button; this will take you to map, inventory, codex, character record, save, exit, etc.

If it does, I haven't come across a purpose for it!

Thank you so much for this!! For the banter, clicking down on right analog means clicking down on the thumbstick right?

Is there a way to change which buttons your spells/abilities are mapped to, or is that all done by the game? I hate the badly-organized way it sets up automatically.

In the Character Record menu there's an option to Map Skills to Button or something like that where you can change your abilities around.

One some controllers there's a mode button and if that's clicked then the analog will change to your walking directions.

No don't, it's all very new. Stumbling is totally natural.

What do you use to call for your horse? It flashed by super fast on the screen and I don't remember.

Radial menu, it's on the bottom half. Just click 'a' and your mount will appear.

Is there a way to zoom in and out like you can do with the mouse scroll wheel?
