You should be able to unlock new locations; do that if you're getting bored with Hinterlands.
You can craft in Haven(Blacksmith is next to the entrance of the town).

Crafting is done back at your main base at the smithy for weapons and armor. You can go up to the Sword Coast and start exploring there as it has mobs that are still reasonable to get through. Potions and grenades are also back at the main base (in my case Haven).

My recommendation would be to stick to an area until you've got uncovered/completed everything that isn't protected by a massive difficulty-gate (part is significantly harder than the rest of the same region, usually means it was intended to be visited later in the game), or plot-gates (can't access it until during predetermined story progression.
Mostly because I'm a completionist gamer.
Note however that it is only one way of playing the game and not necessarily yours.

I share your anxiety on this.
My priority is to acquire all my companions. Which you can by doing most of the hinterlands and then going to Val Rayeux and then the storm coast.
(still looking for Dorian though)
Holding off meeting the mages for now.

Keep an eye on your Journal, as well, if you want to progress the main story and aren't sure where to go or what to do. You can complete most, if not all, the Hinterlands (and possibly some other regions) before even continuing with the main story past that point.
