I just got my bog unicorn and it seems to be identical (play wise) to my horse. Do the different monts have different stats? I am guessing the armored horse can take more hits?

I think it's probably just an aesthetics thing. You can't ride them into battle; if anything hits them you get thrown off. So the benefit of the bog unicorn is that it looks awesome. And that's about it.
