No. You can recreate it with new materials though.
You can change the add-ons, like the arm and leg armor pieces. And for weapons you can swap out the mod pieces like hilts and grips. But you can't change what it was originally crafted from. That would be pretty weird anyway, wouldn't it?

Thanks for answering my question. Yeah, I guess it wouldn't be very realistic. Does this mean crafting armor/weapons is an endgame kind of thing because I don't want to be wasting materials and low tier schematics that you'll probably find near the end of the game.
