I have decided to swap my Rogue over to an Archer but up until now have sold most every bow I've found. Are there any places you know of that sells Bow schematics?

Try Val Royeaux. The shop upstairs behind the café sells a lot of schematics. I don't recall if it has bows specifically, but it has a lot. One of the shops on the main level also has some bows. If you're low on crafting resources, buying a bow may be better.
