Romance mechanics when pursuing multiple love interests

I'm playing as a male Inquisitor, and I decided to pursue Dorian, Cassandra, Josephine, and Bull equally to start in order to see what happened.

 

I moved pretty quickly with Dorian (he was who I intended to end up with in the long road) and was committed to him first, meaning that I have an "End you relationship with Dorian" grey heart option in the dialogue wheel. However, even after this I was able to continue flirting with Cassandra and eventually got to the point when she mentioned my relationship with Dorian and left it in my hands. I haven't broken up with him, yet I can still take flirt options with Cassandra.

 

The interesting thing though is that somewhere along the line my flirt options with Josephine and Bull disappeared. I completed both their personal quests without a single flirt option appearing, and I assume those would be riddled with them in order to advance a relationship with them.

 

So, at a certain point are we limited to just our confirmed love interest and another that we can (for the lack of a better term) string along? Has anyone else had similar experiences when it comes to keeping multiple irons in the fire? I'm just curious about how it all works.
