Great idea. Here's the information for my secondary (female) character. I'll post the male when I type up his stats. 

 

Note: the numbers represent percentages, vertical first, then horizontal. Others can feel free to use this method to save taking a bunch of pictures.

 

(I fully expect to tweak this model when Bioware releases the inevitable character customization upgrade.)

So here is my current attempt. Still issues with the character, though, but maybe it might be a good starting point. That said, if you do make changes to fix some problems, do feel free to share! This is mostly just a starting point since there are still many things that could be tweaked (I used some sliders from another character as a starting point for this one).

You could try my method :

 

1. Choose Head 2

2. The lightest skin color for a Qunari

2. Remove the beard and choose a stubble

3. Change the eye to eye number 1 from the left

4. Eyebrow number 6 from the left

5. Choose mouth number 6 from the left

6. Adjust the width and thickness of the lips

7. Adjust the chin shape, slide it vertically or the Qunari will have a serious underbite.
