According to the paragraph at the bottom of the 'Way of the' specialization quests, you can "only truly specialize in one style, but studying others can still be of considerable benefit." Is it possible to actually finish the other 2 you don't choose? It seems that turning in one of them removes the rest from my journal.

I was able to turn in 2 (the 3rd wasn't complete). I did not confirm the specialization between turning them in .. I think once you confirm the quest(s) are gone.
Edit: The quest is gone but the recipe is still available to craft at the requisitions table so I assume I can still craft and hand it in.

You can do all of those quests yes, but you can only specialize in one. Meaning if you do more than that, then you can always reset your skill points in order to rebuild and specialize in other if you so desire. That is how I understood it.
