Not sure if this is the right place to ask this, but I've just unlocked champions of the just and have also visited Redcliffe but haven't gone to the tavern yet.
Can I visit and talk to both sides before deciding and maybe do a few quests for both?
Also is there a definite point where I have to choose like at the war table or something?

Yea, I'm pretty sure you choose at the war table in the end. That said I couldn't find a way to see the Templars directly beforehand.

The operation in the War table will warn you which side you'll lose by doing it.
