I noticed that the artwork on the cards in the party selection screen changes after certain events/missions. For Sera that happened after I romanced her and for Dorian it happened after a certain mission. Does that mean anything in the long run, like are the those companions now more loyal to me or something?

Yes, it indicates they approval rating with you.

I'm not sure if it always means loyalty. I've had 3 different Varric cards, yet Solas' card stays the same even though I'm kinda romancing him
