Um Its mostly fluff dialogue and dialogue choices.

 

As a Mage Dalish, my character was an apprentice to a Keeper. and she expresses that in dialogue.

 

Humans are nobles.

 

I think Qunari are Vel Torash or whatever its called (they were kicked out)

Yeah, pretty much everything is just flavour dialogue.

 

There was one entire conversation that I'm not sure if non Elves got. Can't really talk about it in case it's secret Elf stuff.

Being elven gives insight in some conversations, as being mage gets a few more dialogues relating to the arcane... Besides that. I don't know if there's any difference... Being a rogue can change a bit of things since you don't need to carry a plushy mate to fights and just bring the A-team to fights.
