I know normal quests appear in my Journal but what about "claim 'x' amount in Hinterlands or find 21 songs/bottles/etc? Are they also listed somewhere so I know how many I am missing for each region?

Not by region, best you can do is go to journal and press on collection.

Collection is right between your active quests and completed ones. Rather useful as well to check on your mosaics, etc.
