Do I really need to do a majority of the side quests over again?  I am almost done with my mage playthrough and I've done about 95% of the side quests right now, and I want to do a stabby rogue next but some of these side quests seem like a grind.

 

Can I get away with just doing the main story quests on different classes once I finish my first?

 

If I just do the main story, will I be seriously underleveled by not doing side quests?

I think you would need to do at least enough side stuff to get the power required to unlock the story missions.  Other than that, I haven't finished yet, so I don't know how much side missions and inquisition level affect the epilogue.
