Let me be clear, they are incredibly impressive, but the actual process of fighting them does not vary from one to the next in any meaningful way such that they become incredibly redundant. To make matters worse, they don't have any special reward after beating them all, such that the only reason you do them is for the fun of it and the purples. I loved their looks, but with the exception of Vistral (who used his electricity circular mark) and the Highland Ravager (who uses the fire bomb mark) they all had some combination of:

- double stomp to yield max guard

- long range dragon breath

- short range dragon breath

- wing flap

- tail swipe / claw swipe

- scream that stuns and calls adds

Unfortunately once you understand some of the basic mechanics they become trivial HP sponges (even on the later difficulties). I feel like they could have done more with them in terms of unique mechanics to each. Vistral and Highland Ravager should have served as a template for how to give each dragon something unique unto it, instead they were just different skinned variations of the same thing. I love this game, enormously, it's my favorite RPG in ages, but I'd hoped for more boss / enemy diversity (basically all bosses had more or less the exact same moves with the exception of the Templar Commander and Corypheus).

Actually, the main reason that you would want to kill them, lootwise, is the fact that they are tier 4 crafting materials.   Which may exist elsewhere, but I haven't seen it.
