I can't find these AI commands. I know I am as dump as a goldfish, but even for us idiots having that ability to say Varric "Your Ranged" don't go try and fight a dragon with a melee weapon. Can anyone tell me the basic fix that gets them in a fight. Please and thank you

Are you sure those commands are in the game? I thought the only options were: when to use potions, who to follow and um... i actually forget, oh how they prioritise spells / skills. I eagerly looked at the tactics window for about a minute before sighing. Nothing like 'go for the mages / ranged people, Boo!'.

 

Press P for the character screen and swap through each character. Make sure the AI is turned on and tweak the... options for each character available.

Those tactic/behavior options are not in DAI. It's a shame, the system is very limiting when it comes to your companions. Not sure if it's a limitation of the Frostbite engine, or they just haven't worked out proper tactics on it yet.
