I've managed to add modifications to other weapons like the staff, so it's not me being stupid. But i sthere any reason I can't add grips to my dagger?

It's a dual-blade dagger grip. It won't go into a single blade dagger obviously just as you can't use hafts on longswords.

 

On another note you get most dps out of +X% flanking damage. No sense in clowning around with +crit and stuff, you will be hitting stuff in the back anyway.

Oh okay, so I am stuck with a tier 1 dagger grip for this one. It would be nice if it said I had to use a "Balanced Dagger Grip" rather than just "Grip".

Never saw a dual-blade dagger, but my hunch is that its grip will say dual-blade grip or something along this. It's differentiated enough, just read the text.

Dual blade daggers exist they just rare. There is awesome unique one. Save it for time you will find one. And yeah, straight flanking damage increase is better unless you are full crit build alchemist with full crit passives set including that artificer party crit aura and even then it is pretty questionable.
