Am I able to play the game as a warrior and start another new game as a mage and flip between the two jobs? Or if I create another new game is it going to replace my warrior job with the new one. I dont want to delete the progress I have made on my warrior job, but am interested in playing the game with mage as my main job.

You can have multiple characters.
If you have more than once character, when you go into the "load save" menu, there's a button to allow you to switch characters.
Each of your characters are separate from each other and what one does doesn't affect the other.

I wasn't aware the Inquisitor could be a Ninja and a White Mage like in Final Fantasy.
But yes, you can have multiple saves with different classes.
