I want to play my second session on the Mass Effect Trilogy but I am having trouble figuring out which class I would like to play as.

On my first session I played as a soldier because I felt it was a good beginner class to get me through the story. Now I want to try something a little different for the second play through.

I play on the casual difficulty since I'm in it mostly for the story and general gameplay.

I generally try to think defensive, going for a cover and using buffs or armor to stay alive. I guess I feel more comfortable when I'm mid range in combat. I would like to use superpowers like biotics or tech since they look cool, however since this is a shooter, I sometimes get distracted and use a gun.

Based on this information, what class other than Soldier would best fit my play style?

I'd say a Sentinel. You should have weapon bonus talents unlocked from your Soldier playthrough and you will be able to use Assault Rifles for mid-range combat. You'll have access to both biotic and tech powers including Barrier and Electronics that make you very tanky. And it becomes even more durable in ME2 and ME3 with the addition of Tech Armor

A note on Tech Armor in ME2: the class is only durable on insanity if you only ever want to refresh your tech armor and shoot people in the face at close range. All your other powers just get lost because all your cool downs are spent on just one power: tech armor.

I would say an Adept is a decent class in both ME1 and ME2. In ME1 you have some trump card powers like Lift an Singularity that will totally disable enemies while they float in the air. Throw can be especially good in places, for instance with the Shiala clone where you can just throw her off the side. You have Barrier instead of Immunity; not as good, but better than the Engineer who has nothing. Go for Bastion specialization and put some points in Stasis to freeze bosses and then shoot them. Warp will help you overcome enemies that turn on Immunity, like Krogans do. Overall, you have a pretty good power set.

In ME2 I like the Adept for the Singularity. Really good at holding enemies in place (if they have armor or shields) and then once you get their protection off and they start floating you can hit them with a Warp for an explosion.

Here is an example of using an Adept in ME2 (insanity) that is mainly focused on Singularity and Warp bombs.

i hesitated long between engi and adept too. Went adept, cause biotic feels more fun. Never played the sentinel road though in SP.

Adept combos are really great on ME2, with thane and one of the justicar queen.

Anyway, each class is really different in combat and worth trying. In me1 i feel engi and adepts are more about disabling enemies rather than damage them with powers.

Since you like being in cover and shoot, I'd say go with Infiltrator. Pistol for mid-range and Sniper for long-range. Plus tech powers as well. But since you like biotics as well, it seems the best choice for you is the Sentinel. Biotic and tech powers are there but lacking advanced weapon training which can be compensated with Bonus Power (assuming you unlocked them via Achievements) of your favorite weapon type.

Class I most liked in ME1 was vanguard since they can do close-combat dmg and they have biotics too(Barrier which is honestly most useful until you get good armor, can't reacll other biotic powers since I played ME1 long ago xD but I know you have throw and wrap as well).Game seems lot of faster to me as playing once(in ME3 this was fastest class to play with since most powers I got as vanguard made my use of weapons useless since almost every combat I could do up close using just charge, supernova and holding "F" key lol).

Still I would recommend infiltrator most since you like more dealing with enemies from afar...and if "sniper" ain't your thing then go adapt it's fun and easy class.Or for mix of both "Sentinel" :)

I'd say infiltrator as well.  It's not so much a "mid-range" class per se, but one that excels at every range - long with the sniper rifle, mid with powers and up close with the pistol (or SMG in ME2/3).  Going with the Operative class evolution turns you into a kinda super combat engineer with some weapon skills, which is fun.
