So far just Cassandra, I'm a completionist so I am no where near a second play through yet.
Suffice it to say though...shes a really boring romance. A few flirts, a rejection/appeal, a couple minor fetch quests and a banned book of poetry and she goes from "We can't do this" to "Now we're married and I'll always protect you!".
I'd have felt better about it if the romance scenes had been a bit more awkward and there was more "we can't talk about last night" for awhile afterwards cause it would have felt better...letting the relationship blossom from a few losses of control and what not...but instead its just..."No...okay fine but you have to woo me, okay now we've had sex and I'm okay with all that and I love you....yay".
So boring.

I haven't seen all the scenes, (still working on my first playthrough) but I romanced Cullen for my Dalish elf mage. Since my Hero of Ferelden was an elf mage he had a crush on, I wanted that small connection (and nod) to my original protagonist, he was first. His story is pretty good and very interesting so far.
The woohoo scene is a bit of making out then fade to black, which i thought was very tasteful and sweet.

I went for Cassandra with a Qunari, made for some really awkward looking animations. Although the kiss looked better than in that video, looking better with him being taller... and she did not look like she was trying to bite his nose off.

Cassandra. Have a soft spot in my heart for supposed 'tough girl' women, dig in through only dedication to see their softer sides. Was nice. Not enough rutting as compared to the other ones though.

Man, I never expected to like basically EVERY romance option available so I created my female elf Inquisitor thinking, "Meh, I guess I'll check out the dude Romance options. I like Cullen, at least." BUT THEN THERE WAS SOLAS and I was like, "Oh ****. Not another mage. You promised yourself. You said, you did! You said, 'No more mages!' And look what's happened!" And it didn't hurt that he's voiced by Ianto Jones from Torchwood either (he just upped his Welsh-ness a bit). So I was fairly content with romancing Solas.
But then Cullen was so cute. And then Dorian was WAY more attractive then I thought he would be. And Josephine is freaking adorable. And Blackwall is really cute in this gruff and kind of sad way? And the Iron Bull is intriguing! AND WHY DID YOU DO THIS TO ME?
So I'm currently romancing Dorian with my male elf Inquisitor because my female was romancing everyone basically and I was like, "Woah, I have to stop and choose one so that I can get through this game without feeling bad that I led everyone on." So I deleted her and started anew with a character I like a lot more.
Actually, a couple questions! If you romance more than one person does anyone ever comment on it? And (unless I'm bugged) we have the option to indicate interest in people that aren't their preferred gender, so does an awkward, "Uh, I appreciate it but I'm not into you." Scene ever happen? Like Vivienne laughing at you wondering if you could ever have a thing with her?

This is actually the first DA game where I'm trying out multiple romance options simply because more than one appeals to me in comparison to past DA games where I really only liked Alistair or Fenris as a romance option. Although, this is also in part due to the fact that this is the one entry in the DA series where I've found myself encouraged to try multiple characters.
My first romance option was Josephine with my male elf. She was adorably awkward with the flirtation dialogue options but her romance also seemed to go the ME2 Garrus route since it looked like after the kiss scene there were only a couple of bits of dialogue and that was it. I'm not saying that there should have been a sex scene but it just feels like there should have been another interaction scene or something of the sort. That is, unless I completely missed something.
Anyway, I'm currently on a playthrough where I'm romancing Cullen with my female human and after that I plan to either try out a Solas romance with a female elf or try a playthrough with my male dwarf who is not exactly picky about who he flirts with which just happens to be anything on two legs.

I accidentally romanced Dorian. I was just doing everyone's personal quests, and I was flirting with everyone because I enjoyed their reactions "Oh, you wanted a tour! Hold on, let me get a steward to accompany us.", only for my guy and Dorian to suddenly start smashing their faces together like drunken action figures. I shrugged and went with it, Dorian is a cool guy and I like his personal arc. He ended up being one of my favorite, if not my favorite, character anyway.

I was planning on romancing Cullen for the past year, but I rolled a female elven rogue to keep my options open. And within minutes I was hooked on Solas instead. Very glad I did too for my first playthrough because I did not see that conclusion coming, and thus was left unspoilt to shed candy-tasting tears again. "Are you kidding me?!" on the dialogue wheel felt most apt.

Cassandra on my first playthrough, and I thought it was great. Very touching. I'm currently on my second with a Qunari female and I'm romancing Sera. Her bed scene with the inquisitor is one the funniest scenes in the game. That girl loves Qunari.

I will not lie, the animation was awful. I looked like I was barely holding the rapier. Another minute and the Inquisitor might have just dropped it and cowered.

You can flirt with Harding, but like Aveline in DA2, nothing comes of it.
