So I've been wondering, what's the difference between all of the 2-handed weapons? Is it stat modifier or attack rate? If someone could explain that to me, that would be awesome. Thank you in advance
Difference between Greatswords and other 2 handed weapons?

Far as I know, Mauls and hammers are single target focused, where as Greatsword and Axe are aoe. If you do more crowd control go sword/axe, if you are more a boss killer, go Maul/hammer.
Other than that I don't think there are any inherent characteristics different between the weapons,.

Hammers seem to attack a little slower, and they seem to miss very easily (either soft or hard lock on). If you're a Reaver doing Dragon Rage it isn't such an issue, but if i had one of each with the same dps, i'd take the Greatsword every time.
Also hammers am nerfed vs breaking pots.

Also they use different types of upgrade grips, for possibly different bonuses.
