I recently finished a playthrough for Mage and I had this party set up:
Me-Necro/Multispec
Varric
Blackwall
Solas.
I only needed to use potions during dragon fights due to Blackwall being such a BA tank and Cassandra ate up a ton of potions in one boss fight so I replaced her as my tank. However now I am doing another play through as a Warrior(2H currently), I'm curious if I should go ahead and specialize my warrior as a sword and board Champion and delegate Cassandra to 2H templar...my question is would that be viable for Cassandra, because I plan on romancing her this playthrough and I really don't want to keep her out of my group but to be honest she is a less than perfect tank when compared to blackwall.

You must have specced her wierdly, I switched between Cassandra and Blackwall as tanks in my hard playthrough and they were both pretty much equal. Nevertheless, to answer your question Cassandra is great with a 2H as well.

I spec'd her the same way I spec'd Blackwall, Full Templar(Champion), and equal points in W&S/Vanguard, aside from the templar/champion trees they both had the same skills in the general trees, but for some reason Corypheus ate through her guard like it was a donut tossed into a fat camp, where as the same fight Blackwall never dropped below 25% guard.

I'll make her a 2H templar instead and just make my character a champion tank.

Blackwall is a much better tank, because the Champion spec is tank spec, whilst the Templar spec is a support/demon killing spec. With Champion for example, you already get +25% Guard and +20% Bonus Armor, and you have an ability where you become invincible for 8 seconds.

Currently running through nightmare and I love 2H Cass set up. I run dagger inquisitor, S&S Blackwall, Solas for Barrier and CC and 2H Cass. This set up runs remarkably well. On nightmare, you burn through potions much faster (especially the early game) and with Cass as S&S she always felt lackluster (at least when compared to Blackwall for obvious reasons) however as 2H she brings more damage and additional CC plus she can peel one or two mobs off my Inquisitor or Solas if we pull threat.
Does she die? Oh yeah. She'll go down on tough fights or if you get caught off guard but blackwall is your tank so it's not as big of a deal and when she goes down everyone is healed to full with a 50% damage increase thanks to her Templar passive (forget the name). This actually allows me to use less potions as well. After hard fights I'll use one on Cass after she gets back up but usually everyone else is topped off so I end up using 1 rather than 4.
2H Cass might not work for you party. But I've found it really fits my composition. If you're interested in it, try it, if it works it works. If it doesn't, it doesn't.
