Which characters are the best to setup to run on autopilot?

Cass. She will do her own thing, come to your rescue and all the while, have full or near full guard as she does it. She just rocks it.

Cass, solas, dorian, varric just turn off his specialization.

I generally only go back and forth between myself and iron bull, and that is only in dragon fights.

Finishing the game on hard I only ever had to manually control another character on dragon fights, I think you would have to no matter who you use. Just use common sense specs and it will be fine, and dont forget to set preffered things in tactics.
