I assume this is possible, since you can end romances even after you've finished them.
I ask because I was planning on romancing Iron Bull but flirt with pretty much everybody. I accidentally triggered Cassandra's romance because of this. I assume it's possible to complete her romance, then break up with her and romance Iron Bull correct? I wasn't initially interested in her romance, but the start of the 'serious' part of the romance has me curious how it works out.
I'm heartless.
