It may just be me, but it seems like any mage in my party dies to easily compared to the other classes. Since there are no healing spells in this game is there really any need for mages in your party? If I do fine with no mages in my party on quests will it screw me over or make a fight harder during a boss or just general fight during the main story later on?
Are mages needed?

I love that healing is potion based, adds a tactical layer. Though the TC sucks at the moment, still, I am forced to play with my mind rather than auto pilot a fight. That to me is way more fun.
But I respect if you don't like that. Variety keeps the world spinning

Depends on what difficulty you are comfortably playing at. On Nightmare, I would say one mage is definitely a must, two is probably better. They offer Barrier spam, which is very nice, and tons of CC and AoE damage. On Hard or lower, it would depend on your skill level and how comfortable you are managing your squishies.
As for bosses, as they are immune to most forms of hard CC, apart from getting different Cross-Class-Comboes and barrier spam, you should be fine not running with a mage.
For exploration they are unfortunately quite handy. There are a number of places which require a mage to "energize" some rubble to form a bridge, block a path, cover a hole, etc. They are also the only ones capable of lighting Veilfire torches, which are required for several side quests and uncovering Rune recipes. But if you are content to clear that out and backtrack later with a mage, thats up to you. You could also skip much of that side content.
