Well, he is somewhat renowned as an unscrupulous genetecist, I'd assume he's cloning himself and using the clones for body parts (saw that on a TV show years ago, hm... can't remember the name now, but the idea sounded awesome at the time). Either that or he's using soem other nefarious scheme to prolong his life.
Anyway, they say Salarians over 40 are a rarity, not that they don't exist. getting struck by lightning is a rarity, yet tell that the the average of 62 people killed by lighting strikes in the US every year. Mordin just got lucky, that's all.

And who is to say what an elderly salarian would look and act like? The house fly has an average lifespan of 24 hours but you don't see rickety geriatric 20 hour old flies hobbling about on canes, now do you?
