What does masterwork do for upgrades?

I believe the 'masterwork' prefix simply implies that you can put more materials in it. For example, a regular hilt might have room for 6 metal, whereas a masterwork hilt of the same type could hold 8.
It's a bit annoying that Bioware uses 'masterwork' to refer to both a different schematic as well as masterwork crafting (which is something else entirely as it uses fade-touched materials).

It has a whatever % chance to up your stats by 10% (for amror I'm guessing it's the defensive properties)

That's critical craft, not masterwork.

Note that gambling on critical craft wastes the masterwork slot. So IMO its never worth it to try mastercrafting.
