I have killed several dragons so far and am wondering if there is a reason to hold on to the dragon mats for any unique purpose/items or should I treat them just as regular materials and use them whenever? Another way of saying that is do I need them for any specific recipes/quests?

They're just high tier crafting materials. Nothing special. Dragon's tooth, however, can be used for masterwork.

Hoarding enough and using it to make a set of armor/weapons for your Inquisitor seems like a good idea. and make them all at once.
