Besides the ones you can buy in stores, do they have specific locations or are they just random drops?

random mostly. some schematics aren't but I'm pretty sure you can get any schematic in the game randomly from chests, especially if you save before a chest and reload til you get one

I like the schematics you get from the Deluxe edition.
