I despise crafting and getting schematics in these type of games....

Im lvl 8 and havent found any good weapons or armor from loot or merchants. Am I going to have to cave in and start crafting or will merchants have enough variety for me to have good gear? Im more interested in stats than appearence.

Yes if u want a full experience, but there are static pre-crafted loot u can find. So u could probably get by with not crafting.

Like mentioned it's not necessary, due to RNG drops/loot containers you might go a long time without finding something really interesting unless you wander upon those 'static' loot locations with rare or unique items, specific enemy drops and occasionally one or two things sold in shops can be useful.

If anything I'd invest in tier 2/3 armor schematics and upgrades for your character (you'll get some decent tier 2 options in Val Royeux and later tier 3 in Hissing Wastes) but a word of warning: Save your game before buying them since there is no preview and immediately run off to craft the items and see what you can make compared to what you're wearing.

Some schematics don't have Upgrade slots or are race/class specific so also take note of that. If you don't like what you've bought and crafted just load your save and keep your gold for other things.

Loot drops are very unreliable. For instance, I have seen way more 2 handed weapons than anything else, regardless of what class I played. And they all have level restrictions. Doesn't matter if you find some awesome gear, you won't use it until you meet the requirements. Thus you will never be ahead of the enemies.
Crafting is the real deal in this game. Being at level 12 and craft a level 20 weapon is cool. It makes a world of different on Nightmare difficult.
I guess you can get away without crafting on Normal, but certainly not on Nightmare.
