I'm still fairly early in the game. Just got to Skyhold and tried to craft some of the pre-order items but I don't have enough mats. Can these all be obtained in the hinterlands? Any decent farming spots?

Killing animals will get you leathers, you'll get random materials from enemy drops, and you can get metals from mining the ore nodes you come across.

When you see wolves, bears, nugs... whatever... if it's furry, kill one and see if you get a hide you would want to use.

Yea, materials are everywhere.

As said above, animals for leathers, metals from notes and killing humanoids often nets you cloth.

Failing that you can also buy a load of materials from a merchant in the hinterlands.

You can get a lot of Iron at Haven and they respawn.  Don't know where else maybe the Hinterlands?

I have a huge tip for you as well.  Keep a very close eye on your war room map as you progress the game.  Each time you go through an area, you open up war map quests that are generally classified as "gather (insert area name) resources".  Depending on which of your three agents you assign, they'll bring back different things (usually indicated in the comment by that character).  Some of these areas can wield incredible materials.  For instance, after getting to the Western Approach, you can start assigning Leliana to search for metals.  She tends to get 6 everite each time, and this metal is fantastic for creating high damage weapons or high defense armors.

Also, once in Skyhold, make sure you upgrade the garden so you can have 6 "pots" for growing hard to find items.

Aside from that, use merchants when you can for basic material.  But definitely go after that Everite...you won't regret it when you see some of the schematics.

I haven't visited the feedback thread, so this may have been mentioned, but... I'd really like the ability to jot down notes on the map to where I found rare herbs and metals, so I can quick return to them later.

Many crafting supplies can be looted from Red Templars and other enemy factions.

There is an option to send people out to gather supplies, but it only nets you 100g/4-6 of whatever. It shouldn't even be in the game, but whatever.
