On a particular playthrough, is there any point in completing the specialization quests for the two specializations you don't take? Does that unlock them for other npcs? For subsequent playthroughs?
Related, if i've done the full quests for two different specializations can I use that respec item to switch from one to the other?
No, and no.
The only bonus is extra xp, and also if you don't take the extra quests then you constantly have a ! on your skyhold map when you're done representing the other two, so I guess to stop the annoyance of that would be a plus to taking all three. However, you can only have one spec at a time, and you have to unlock them every new gameplay
